Owner and sommelier Matthew Feldman considers it an obligation to use authentic, homemade ingredients whenever possible in the dishes his brother prepares. The benefit of sustainable technology speaks to the progressive philosophy of Fiori restaurant and Berkshire County as a whole, and allows Fiori to feature kitchen-grown arugula, basil, sage, rosemary, and other fresh ingredients.

The hydroponics table was purchased from Shire Organic and Hydroponic Supply, a local indoor garden supply shop. Rob Rollick, owner, explains that the system maximizes the use of water and that every part of the system is reusable, providing “tremendous benefits for the restaurant, the customer, and the environment.”
Fiori has taken a truly progressive step in sustainability and freshness. Bravo!
