A Perfect Pair: Fiori’s Wine Dinners bring together authentic Italian foods, wines, and a helping of knowledge

Chef Alex Feldman and Matthew Feldman

Beautiful beaches, a sophisticated atmosphere, breathtaking landscapes, and fascinating historic sites make Sardegna one of the most celebrated regions of Italy. And if that isn’t enough, the island’s traditional cuisine is renowned worldwide.

The Sardegna region comes to Fiori Restaurant Wednesday, Nov. 9, as the Berkshire eatery continues its Wine Dinner series – a culinary journey through northern Italy. November’s event will feature Alfonso Gagliano of Sella & Mosca Winery, Sardegna’s foremost wine producer.

Fiori’s monthly Regional Wine Dinners feature regional dishes paired with the wines that best complement them. Each dinner includes a menu exclusive to the evening, offering foods and wines from a different region of Italy. Experts including winemakers, sommeliers, and others, offer guests an explanation of the dishes and the wines—why each complements the other, the historical significance of each, the regions of Italy from which they originated, and more.

The $65 prezzo fisso menu includes three dinner selections and a dessert, as well as wines originating from the month’s targeted region. There is also the option to upgrade wine selections for an additional
$20.
From the kitchens of Sardegna to Fiori Restaurant, this month’s dinner event features:
• Zuppa di arselle — baby clams simmered in white wine with garlic, parsley, and bruschetta; paired with La Cala Vermentino 2009.
• Melanzane alla Sarda — eggplant baked with tomato, bread crumbs, garlic, and basil; paired with Cannonau Riserva 2007.
• Stufatto di Capra — stewed goat shoulder, wild thyme, and pecorino potato puree; paired with Carignano Terrerare 2005.
• Seadas — deep fried ravioli with honey-sweetened goats milk ricotta; paired with Fiori’s housemade limoncello.

December’s Wine Dinner event will feature selections originating in the northern Italian region of Emilia-Romagna. In January, Fiori will feature an ‘evening in Cibreo,’ the internationally renowned restaurant in Florence where Chef Feldman learned Tuscan Cuisine.
